Sometimes recipes are great, but usually I just play with whatever ingredients are lying around the kitchen. I like to get creative whenever possible.
Last night I sauteed one onion and one clove of garlic in olive oil.
I sliced a slab of Firm Tofu horizontally into four pieces.
I then cut each of the four pieces into cubes.
I tossed the cubes into the pan.
I made a peanut sauce with peanut butter, olive oil, water, & a shake of red pepper
I added the sauce to the pan.
I chopped up a head of broccoli and added it to the pan.
In a separate pan, I cooked whole wheat couscous with sliced tomato added to it.
I put the couscous on a plate and spooned the tofu mixture over it. Delish!
Bonus: It only took about 25 minutes.

Now that does sound beautiful. We haven't done tofu and peanut sauce in a long time (my kids have been asking for it), and this sounds way better than the recipe I have used. Thanks for the idea! And for your kind words over at my place.
